Basic Oatmeal Muffin Recipe

Ingredients
1 cup old-fashioned rolled oats1 cup buttermilk1 large egg, beaten lightly1/2 cup firmly packed light brown sugar1/2 cup applesauce1 cup all-purpose flour1/2 teaspoon salt1 teaspoon baking powder1/2 teaspoon baking sodaFlavoring ideas: Add in 1 cup of blueberries, 1/2 cup chocolate chips, mashed banana, orange zest and craisins, currents, cinnamon and diced apples, etc.
Directions
In a large bowl, combine oats, Greek yogurt, &milk and let stand 1/2 to 1 hour depending on how "oaty" you want it. More time means a softer texture.

Preheat oven to 350°F. and spray twelve 1/2-cup muffin tins.

Add egg, sugar and applesauce to oat mixture, stirring until just combined.

Into another large bowl, sift together flour, salt, baking powder, and baking soda and add to oat mixture, stirring until just combined. Fold in currants.

Divide batter evenly among prepared muffin tins. Bake muffins in middle of oven until golden and a tester comes out clean, about 20 minutes.

**When making muffins, just add in 12 servings of this recipe along with whatever you add to it.
