Grilled Guiness Corned Beef Sandwiches

10 slices rye bread1 pound shredded corned beef2 cups shredded cheddar cheese1 medium onion, sliced1 bottle Guiness or other dark beer2 tsp worchestershire sauce2 tbsp Dijon mustard
Slice the onion and saute for 6-7 minute in 1 tbsp oil.
Add 1/4 cup of Guiness and simmer on medium-low heat for 15 minutes or until liquid is mostly gone. Repeat 3 times until whole bottle is used.
Add 2 tsp worchestershire sauce and 2 tbsp dijon mustard to the onions and mix.
Grill sandwiches with cheese, onion, corned beer, and another layer of cheese for 2-3 minutes on each side.
Makes 5 sandwiches.
