Digest Diet Edamame Mash With Parmesan

Ingredients
1.5 C frozen shelled edamame2 cloves garlic thinly sliced2 tsp olive oil.5 tsp grated lemon zest1T fresh lemon juice.25 tsp fine sea salt.25 cup grated parmesan cheese
Directions
1. Boil edamame and garlic until tender about 5 minutes. Mesure out 1/2 cup of the cooking liquid and reserve. Drain the edamame and garlic and transfer to food processer.
2. Add the 1/2 cup reserved cooking liquid, oil, lemon zet, lemon juice and salt to the processor and puree until smooth. Add the parmesan and pulse until combined. Serve Hot.
