2 lbs carrots cut into 1/4 inch thick rounds1 cup fat free milk or lactaid 1 cup ritz cracker crumbs(about 25 crackers)1/4 cup grated 2% milk sharp cheddar1/3 cup minced onion1/4 teaspoon cayenne or black pepper6 egg whitesolive oil cooking spray
hest oven to 350 and spray a 2 or 2 1/2 quart shallow baking dish. Cover carrots with water, bring to a boil then simmer for 15 minutes or until tender.Drain carrots and transfer to food processor and puree until smooth. Transfer to a large bowl and stir in milk, cracker crumbs, cheese, onion and cayenne. Beat egg whites with electric mixer until foamy and fold into carrot mixture. Bake in prepared dish until puffed and light golden brown. Turn oven to broil and broil 8 inches away from heat until golden brown(2-3 minutes)
Cut into 8 portions and serve warm.
