spinach chicken stuffed shells

21 Jumbo shells12 oz boneless skinless chicken breast1 small container of light ricotta cheese3 Tb eggbeater1 package birds eye frozen chopped spinach2-3 Tb finely chopped basil (fresh)pinch of garlic powderpinch of salt (optional)1 jar of past sauce (I used trader joes roasted garlic marinara)
1) cook chicken breast in oven-- allow to cool and then finely shred
2) boil shells
3) finely dice onion and garlic, saute until soft
4) mix shredded chicken, ricotta, egg beater, spinach, and basil together
5) stuff each shell with a budging tablespoon of filling
(when stuffed you will have a small amount of filling left over
6) place each shell seam down in oven safe casserole dish
7) cover with sauce
8) Bake in oven, covered, for 20-30 minutes until warm
9) sprinkle with mozerella cheese
10) put back in oven, uncovered, bake until cheese in melted
Serving Size: 7 shells
