Quick Skillet Lasagna

Ingredients
1 lb lean ground beef6 Tbsp spaghetti sauce mix (spice mix)2 cups cottage cheese3 cups uncooked egg noodles1 Tbsp dried basil1 Tbsp dried parsley1 tsp salt3 1/2 cups canned diced tomatoes1 cup water2 cups shredded low fat jack cheese
Directions
1. Lightly brown ground beef
2. Sprinkle 2 Tbsp spaghetti sauce mix over meat
3. Spread cottage cheese over meat
4. Spread uncooked noodles over mixture
5. Sprinkle with remaining spaghetti sauce mix
6. Sprinkle basil, parsley and salt
7. Add tomatoes and water making sure everything is moistened.
8. Cover tightly and simmer 30-35 min or until noodles are done.
9. Remove from heat, sprinkle cheese over the top, return cover and and let stand 10-15 minutes.
