SANE/Paleo No-pea "Split Pea" Soup

Ingredients
1 ham bone, ideally fairly fresh from your ham dinner8 cups water 1 head fresh cauliflower, chopped (or 16 oz. bag frozen)Half an onion, choppedScoop of chopped garlic (roughly a Tbsp)2 cans green beans, drained (or 16 oz. bag frozen)2 cups chopped ham1 Tbsp butterOther half of the onion, chopped, some shredded/chopped carrot and some chopped celery*Old Bay seasoning or seasoned salt, salt and pepper, to taste
Directions
1. Put the ham bone, cauliflower, green beans, garlic, and half onion in a large soup pot. Add the water; bring to a boil. Cover and simmer about 60-90 minutes, or whenever you remember it.

2. Remove the bone, and scrape out any marrow you can into the soup. Puree the soup with an immersion blender until smooth. Alternatively, use a blender in batches until smooth and return to the pot.

3. Remove any meat from the bone, cut into bite-size pieces and add that plus the 2 cups chopped ham to the soup.

4. Let the bone cool and give to your happy dog.

5. In a medium skillet, sauté in butter until tender the other half of the onion, carrot, and celery.

6. Add to the finished soup before adjusting the seasoning with Old Bay, salt, or pepper.

7. Cook until heated through.

    I liked it a lot! It doesn't taste QUITE like split pea soup, but it's pretty close. Good consistency as well. I am not familiar with Old Bay spice, but I threw in some Cajun seasoning, as well as salt and pepper, and it was quite tasty. - 1/7/15
