15-Bean Soup Mix (dry), 2.5 cup Extra Lean Beef Stew Meat, 1lb, cubedBeef bouillon, 2 cube Water, 8 cup Bay leaf, 2 wholePepper, black, .5 tbsp Sage, ground, 0.50 tbspThyme, ground, 1 tspGarlic, 5 clovesOregano, ground, 1 tsp 1 can Rotel (canned tomatoes with jalapenos)Onions, 1 medium, chopped Celery, raw, 2 cup, diced Carrots, raw, 3 cup, choppedMushrooms, 2.5oz, sliced
Remove and discard the seasoning packet (if included) from the bean soup mix. Place the beans in a large soup pot and add 2 quarts of water. Cover and allow to soak 8 hours or overnight.
Drain the beans and put them in your Crockpot. Add 8 cups of water, the beef bouillon, oregano, garlic, Rotel, pepper, sage, thyme, bay leaves and stew meat. Turn crockpot to high and let cook for 6-8 hours.
1.5 - 2 hours before serving add the remaining ingredients, stir well, keep temperature at high and let cook.
Serve with a good crusty bread or some crackers.
Serving Size: Makes 13 1.5-cup servings (20 cups total)
