Soft & Chewy Molasses cookies

Ingredients
1/3 C Granulated sugar, plus more for dipping2 1/4 C AP Flour1 tsp baking soda1/4 tsp salt1 1/2 tsp cinnamon1 1/2 tsp ginger1/2 tsp cloves1/4 tsp allspice1/4 tsp pepper12 Tbls unsalted butter, softened1/3 dark brown sugar, packed1 large egg yolk1 tsp vanilla extract1/2 cup molasses
Directions
Adjust rack to middle of oven and preheat to 375°F
Whisk flour , baking soda, salt and spices together in a medium bowl until combined.
In stand mixer, beat butter and both sugars until light and fluffy, about 3 minutes. Reduce speed to medium-low and add egg yolk and vanilla. Increase speed to medium. and beat until incorporated, about 20 seconds Reduce speed again and add molasses, beat until light and fluffy, scarping sides of bowl once.
Reduce speed to lowest setting, add flour mixture and beat until just incorporated, scraping sides of bowl once. Give dough final stir with rubber spatula to ensure no pockets of flour exist at the bottom. Dough will be soft.
Using tablespoon measure, scoop heaping tablespoon of dough and roll into 1 1/2 inch ball. Dip into sugar and place on cookie sheet, 2 inches apart.
Bake for 11 minutes or until cookies are browned and puffy, but look raw between the cracks.
Cool cookies on sheet for 5 minutes, then transfer to wire rack.
