Pressure cooker French Beef

1 1/2 lb. Chuck roast1 large onion, cut in strips1 Tbsp. minced garlic (2 - 4 cloves to your taste)1 can mushrooms1 cup red wine1 cup beef broth1 tsp thyme1 Tbsp. corn starch (or tapioca starch or potato starch) 2 Tbsp. waterSalt & pepper to taste
Cut roast into 4 pieces (in half, then each half in half) put aside.
Heat pressure cooker over medium heat. Add oil, then onions, cook, stirring often. When softened, add garlic, stir. Add beef. Brown top and bottom. Add thyme.
Add wine, broth and mushrooms.
Put on pressure lid.
Cook for 30 minutes after pressure cooker starts hissing or reaches pressure. Follow directions for yours.
After 30 minutes, turn off heat. Let cool. Follow directions for your pressure cooker about opening. When ready to be opened, mix water and corn starch in a small bowl. When dissolved add to beef mixture. Stir until gravy develops.
Serve over rice, noodles or mashed potatoes.
