Cranberry Nut Shortbread

Ingredients
2 1/2 cups almond meal1/4 tsp sea salt1/2 tsp baking soda1 cup finely hopped hazelnuts1/2 cup olive oil5 tbsps coconut nectar (or honey)madagascar vanilla bean seeds (or 1 tbsp extract)2/3 cup dried cranberries
Directions
Simply combine all ingredients in a bowl and mix well. Roll the dough up in parchment and chill in the freezer until firm.
Preheat oven to 375 degrees.
Remove dough from freezer and unwrap. Cut into 1/4" thick slices and place on parchment lined cookie sheet. bake for approx 9 minutes. Allow to cool on cookie sheet.
