Coconut Quinoa Granola

Ingredients
3/4 cup uncooked quinoa, rinsed and well-drained1/4 cup coconut flour1/4 cup flaxseed meal1/2 cup raw pumpkin seeds1/2 cup whole and/or slivered almonds or other nuts1/4 cup honey2 tbsp coconut oil1 tsp ground cinnamon1/2 tsp salt3/4 cup dried berries2 tbsp chia seed
Directions
1. Preheat oven to 350 degrees F. In a large bowl, combine dry ingredients. In a small glass or microwave safe bowl, combine coconut oil and honey and microwave on high for 15 second intervals until both are melted. Pour honey mixture over dry ingredients and mix well. Spread in a shallow baking dish.
2. Bake, uncovered, for approximately 20 minutes or until golden brown, stirring twice. Stir in dried berries. Cool completely. Sore in an airtight container or zip top baggie in the fridge for up to two weeks.
