Carribean Herring and Yam

Ingredients
80 g. grape tomato, halved80 g. English cucumber, 1/4 inch dice50 g. Vidalia onion, diced100 g. smoked kippered herring, bone and skin removed1 Tbs. Rocket Fuel Salsa
Directions
Simmer Herring in water for 30 minutes. Remove bones and skin and flake into small bowl. Add cucumber, tomatoes. salsa and onion. Serve over boiled white yam
