Butter - 100g.egg yolk - 1 large egg.salt - 1 tsp.Instant yeast - 10g.U.H.T. milk (3.25%) - 1 cup.high protein flour or bread flour - 380g.yellow corn meal - 120g.
Beat all the ingredients together to form a smooth dough. you can melt the butter (100g) first and then add the milk before mixing it in with the flour, raisins, salt and yeast.
leave the bread to rise for about 1hour. (cover with plastic wrap or table cloth). This is the first rise.
beat the dough (of the first rise), and divide it into 200g doughs. roll the doughs up individually. after rolling, put them on a greased baking tray and leave aside for another 30 minutes.
brush the top with egg (egg yolk beaten up) and bake at a temperature of 160degC (for 20mins) or golden brown (whichever is more accurate).
serve with pride after letting it cool for a while.
