crunchie nut salad

Ingredients
broccolicarrotscucumbercauliflowertomatoesparsleycelerygreenonionsextra virgin olive oilorganic apple cider vinegargood quality tamari soy saucefresh lemonfresh gingerraw unsalted pumpkin seeds, almonds, sunflower seeds or other nuts and seeds to suit your tastes
Directions
add one tsp of olive oil to frying pan at medium heat
them to frying pan add raw almonds,raw pumpkin seeds and raw sunflower seeds
saute for 5 minutes until the nuts are just starting to brown lightly
then to the cooking nut mixutre add ginger root and 1.5 tsp of good quality tamari soy sauce keep the frying pan on heat until most of the soy sauce has evaporated and is coating the seeds and nuts then removce from heat and let cool for 10-15 minutes or until the nuts become cruchie again
in a lagre bowl add remaining olive oil,lemon juice , apple cider vinegar and soy sauce. wisk mxiture together
then add chopped tomatoes,celery ,parsley,carrots, auliflower, cucumber and broccoli then toss the mixture together
top with chopped green onions and nut and seed mixture and serve
