Veggie Quiche Cups

Ingredients
1 package (10 oz) frozen chopped spinach3/4 cup liquid egg substitute3/4 cup shredded reduced-fat cheese1/4 cup tomaotes, chopped2 Tbs onion, chopped1/8 tsp hot-pepper sauce (or to taste)
Directions
Microwave spinach for 2 1/2 minutes on high. Drain the excess liquid.
Line 12 cup muffin pan with foil baking cups.
Spray cups with cooking spray.
Combine the egg substitute, cheese, tomatoes, onions and spinach in a bowl.
Mix well.
Divide evenly into muffin cups.
Bake 350 degrees F, for 20 minutes until knife inserted inthe center comes out clean.

Quiche cups can be frozen and reheated in the microwave.

    I was looking for the recipe for the South Beach veggie quiche cups and this is it - a bit modified but very good. you can switch up the veggies however you want. I added Mrs Dash Extra Spicy instead of the hot sauce ( I was all out) Use Southwestern style eggs as a switch also. - 3/21/09
