Easy Vegan Sausage Gravy for Biscuits

Ingredients
I package of vegan sausage (I use Gimme Lean ground sausage)2 cups soy milk1 small onion finely chopped2 cloves of minced garlic 1 tablespoon extra virgin olive oil 1/4 cups flour, give or take, dividedPinch of PaprikaSalt & pepper to taste
Directions
1. Sauté onions, mushrooms, sausage (break sausage into small crumbles as cooking) and garlic in olive oil in medium pan over low heat until mushrooms are soft, onions translucent and sausage browned.
2. Pour in 2 cups of soy milk.
3. Add 2 tablespoons of flour and stir to thicken mixture to make gravy. While stirring continuously, add additional flour gradually until gravy is desired consistency/ thickness.
4. Stir in paprika, salt and pepper to taste.
5. Remove from heat and pour over vegan biscuits.
