low carb omelette muffin

Ingredients
6 lg eggs beaten1 package lardons, cooked until crispyonion chopped fine and sauteed with lardonssmall red pepper sauteed with lardon and onion1 cup grated sharp cheddar cheese1/4 cup heavy cream
Directions
sautee lardons, onions, peppers in a pan over low heat until the lardons give up their fat and become crispy and the vegetables are soft and turning brown. cool. spray muffin cups with cooking spray and evenly distribute bacon, veggie mix between 9 muffin cups. beat eggs and cream togeather and pour over bacon mix. divide cheese on top evenly and bake in oven at 350 for approx 15 minutes. mix will puff up and brown a little.
