Ingredients
1 cup unsweetened applesauce (may use apple butter)1/2 cup buttermilk1/3 cup molasses1/4 cup canola oil1 large egg2 tsp. vanilla extract2 cups all-purpose flour1/2 cup dark brown sugar, lightly packed1 tbsn. ginger1 1/2 tsp. cinnamon (or more)1/4 tsp. cloves2 tsp. baking soda1/2 tsp. salt
Directions
Preheat oven 350F.
1. Mix wet and dry separately.
2. Mix wet and dry together.
3. Lightly grease pan and add batter, smoothing it out.
4. Bake 30-40 minutes.

    This cake was very good! It did taste more like a spice cake. I would alter spices next time - 3/26/13
