White Onion Soup

Ingredients
Onions, raw, 1 medium (2-1/2" dia)Flour, white, 0.25 cupButter, salted, 1 pat (1" sq, 1/3" high)chicken bouillion (1 cube), 1 servingNutmeg, ground, 1 tspMilk, 2%, 2 cupWater, tap, 1 cup (8 fl oz)Low fat cream cheese, 1 tbspSeasoning to taste
Directions
Melt butter in large heavy pan, and on a low heat cook onions without browning them - for about 5 minutes.

Next stir in one tablespoon of plain white flour, stirring constantly, and cook on lowest heat for one minute.

Then add half a pint of hot but not boiling water. Cook for 10 minutes. Add 2 cups of milk, nutmeg and stock cube and cook for another 20 minutes. Season to taste.

Blend until smooth.

Top each serving with about a teaspoonful of cream cheese. I used light garlic and herb.
