Banana Oat Muffins

1/4 cup butter, softened1/2 cup sugar2 large eggs1 cup white all purpose flour1 cup whole wheat all purpose flour1/2 cup Quaker oats1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/2 cup milk1/4 tsp white vinegar (added to make buttermilk like)'4 Bananas, fresh, overripe- smashed1/2 cup nuts (pecans used for the nutritional value of this recipe)
Cream butter, sugar, eggs. In sep bowl, mix dry ingredients (white flour, wheat flour, oats, baking powder, baking soda, and salt). Add dry ingredients, milk and vinegar and mix well. Add nuts (optional). Pour into 21 muffin cups. (serving size used for this recipe- but would also make a great loaf)

So sorry! New to posting recipes, and I didn't realize that although I listed it as an ingredient for nutritional value, I didn't list it in the other ingredient window! I fixed it. Tip: If only have 2 bananas, add 1-2 small containers of applesauce- my girls love it with the berry kind.
