3 Chipotle Pepper in 3 Tbsp Adobo SauceOlive Oil, .25 cupCremini mushrooms, quartered, 1 poundZucchini, diced, 1 poundOnions, raw, 2 medium, choppedGarlic, 3 cloves, choppedChile peppers, 3, choppedCumin, ground, 1 tbspCoriander, ground, 1 tbspThyme, fresh, 1 tspMarjoram, dried, 1 tspTomato Paste, 0.25 cupLandshark Lager, 1 bottleBeans - Bush's Black Beans Reduced Sodium, 1 canLime Juice, juice of 1 lime, 2 tbspScallions, raw, .5 cup, choppedDairy - Daisy Light Sour Cream, divided into 4 servingsCilantro
Cover chipotle peppers with a couple of cups of water and bring to a boil, 10 minutes.
In a large pot, heat the olive oil over medium-high heat. Add the mushrooms and brown for 7-8 minutes, then add the zucchini, onions, garlic, fresh chile pepper, spices, herbs, salt, and pepper. Stir frequently for 10 minutes.
Add the tomato paste and stir for 1 minute. Add the beer to deglaze the pan. Stir in the beans. Bring to a bubble, and then reduce the heat and simmer for 10 minutes to combine the flavors.
Add the lime juice.
Serve with sour cream and cilantro on top.
