Kale Frittata

Ingredients
1 small onion, chopped4 cloves garlic, chopped1/2 lb lean ground turkey3 cups rinsed and finely chopped kale, stems removed1 egg3/4 C liquid egg white1/2 C egg substitutesalt and pepper to taste
Directions
Saute onion over medium heat, stirring often. Add garlic, saute for another minute. Add ground turkey and cook another 5 minutes (approximate), until cooked through, making sure to break up turkey clumps. Add kale, reduce heat to low and cook covered for about 5 more minutes. Season with salt and pepper, if desired. Stir. Beat egges, season with a pinch of salt and/or pepper, and pour on top of mixture evenly. Cook on low for another 2 minutes without stirring.
Put under preheated broiler in middle of oven, about 7 inches from the heat source, on low, so it has time to cook without the top burning. When it gets firm it is done, about 2-3 minutes.
