Italian Tomato Chicken

- 4 chicken breasts-2 to 3 large tomatoes with mini tomatoes too if desired- 1 clove of garlic- olive oil for cooking ( 2 tbsp)-salt and pepper to taste- any dry or fresh herbs( rosenary, oregano, parsely, basil, onion chives, etc.) - half of a seeded dried red pepper(opt.)
1. cook minced garlic and sliced onion in olive oil till onion browns( if spicy version is wanted cook red pepper here too)
2. add chicken strips and when it starts to brown chopped tomatoes(mini ones are halved)
3. add salt and pepper and dry herbs
4. add fresh herbs and turn off heat
Serving Size: Serves 10 people or 5-6 and leftovers the next day
