Beetroot Hash

170g potato1 medium beetroot (approx 100g)75g unsmoked bacon lardons (or 3 rashers bacon)1/2 onion (60g)peppercayenne pepper30ml Elmlea single
Peel and dice the potato and beetroot. Cook (in separate pots) until tender, about 10 minutes.
Meanwhile, put the bacon and onion into a frying pan and cook gently.
When the potato and beetroot are cooked, add to the pan with the cream, pepper and cayenne.
Flatten until compact and cook until brown on the bottom. Cook for about 10 minutes, stirring the bottom crust occasionally.
Will serve one as a main meal with meat or two as a side dish with other vegetables.
