Baked Potatoes with Black Bean and Corn Salsa

Ingredients
4 small baking potatoes

16 oz jar black bean and corn salsa
1⁄2 c shredded 2% reduced-fat cheddar cheese
Directions
Pierce potatoes with a fork and arrange on a plate. Microwave on high about 10 minutes, or until done. Immediately wrap hot potatoes in aluminum foil. Pack desired amount of salsa in 4 small containers. Pack cheese separately. At lunch, unwrap potatoes, fluff with a fork, and top with salsa and cheese.
