Watermelon Blueberry Banana Split

  • Number of Servings: 1
Ingredients
  • 2 large bananas
  • 8 "scoops" watermelong and/or cantaloupe
  • 1 cup blueberries (or raspberries or strawberries)
  • 1/2 cup low fat vanilla yogurt
  • 1/4 cup granola
Directions
1. Peel bananas and cut in half crosswise, then cut each piece in half lengthwise. For each serving, lay 2 banana pieces against the sides of a shallow dish.

2. To make watermelon "scoops" use an ice cream scoop to create balls of watermelon. Remove seeds, if needed. Place a watermelon "scoop" at each end of the dish.

3. Fill the center space with berries.

4. Stir yogurt until smooth, spoon over the watermelon "scoops".

5. Sprinkle with granola.

Serves 4.

    I did not care for the combination of watermelon and banana. I prefer the mock banana split I make with 1/2 cup of cottage cheese, banana, and 1 Tbs. low sugar jam (warmed in the microwave) drizzled over the top. - 3/22/09

    This was ok, but for 200 calories I can have some REAL ice cream, which is better. I eat enough fruit and veges at other times, so would rather spend my dessert calories on something I really enjoy. - 11/18/09

    This was awsome! Tried it with the cottage cheese suggested above also. I like them both, but prefer the origanal. Calories are high, but I make this my breakfast with a slice of toast. This holds me over till lunch. - 9/28/09

    This recipe is very similar to what I eat quite often for breakfast (which is plain, fat-free Greek yogurt topped with fresh fruit and granola/dry cereal--with some flaxseed and chopped nuts sprinkled on top).
