Winter hearty soup

Ingredients
Kale, 1 medium bunch chopped (about 3 cups)Carrots, 6 small, dicedPotato, 1 large, diced Leeks, 3, choppedTomatoes, canned, 1 28 oz canChicken or Turkey stock, home-prepared, 4 cup (or one box of stock)Onions, 2 small, dicedGarlic, 4 tsp or 3-4 cloves diced Beans, white, 1.5 cup or 1 15 oz canParmesan Cheese rind, 1 oz Pancetta, 4 oz, dicedolive oil, 1 tbsp
Directions
chop/dice ingredients as indicated. in a large pot, start the olive oil on medium heat. When shimmering, drop in diced pancetta and allow it to render for a few minutes. next drop in leek, onion, and carrot, and cook for a few minutes until softened. add garlic and cook another minute. next drop in canned tomato, then place kale on top of other ingredients and cover. Allow the kale to wilt for a few minutes, then stir into the leek/onion/carrot/tomato. add potato, beans, stock and parmesan rind, and stir together. season with your favorite herbs. I like rosemary, thyme and parsley in this soup. salt and pepper to taste.
