Moist Low-Fat Chocolate Cake

Ingredients
1 1/2 cups granulated sugar1/2 cup baking stevia1 3/4 cups all-purpose flour3/4 cup unsweetened cocoa powder1 1/2 teaspoon baking powder1 1/2 teaspoon baking soda1 teaspoon salt1/2 cup egg white liquid1 cup skim milk1/2 cup unsweetened applesauce2 teaspoons vanilla extract1 cup boiling water
Directions
1. Preheat oven to 350 degrees.
2. Use a pat of unsalted butter to very lightly "grease" a 9 x 13" cake pan, or use a light coating of baking spray.
3. Mix dry ingredients together in a large bowl.
4. Add wet ingredients to dry, and beat on medium speed for a minute or so. Mixture will be thin.
5. Pour mixture into cake pan.
6. Bake for 35 minutes, or until toothpick inserted in center of cake comes out clean.
7. Allow to cool for at least half an hour before serving.
