Broccoli Cheese Soup

Ingredients
Cooking spray, to coat soup pan1 small onion, minced16 oz broccoli3 1/2 cp Chicken Broth4 oz Velveeta, light cheese product, cubed1/2 cp skim milk1/2 tsp garlic powder1/2 cp water1/4 cp cornstarch1/2 tsp black pepper1/4 tsp white pepper
Directions
Spray a large saucepan with cooking spray and saute onion over meduim-high heat until onion becomes soft, about 3 minutes. Add the broccoli & broth and bring to a boil. Reduce heat to medium and cook until broccoli is tender, about 3 more minutes. Reduce heat to low and add cubed cheese stiring until melted followed by milk, garlic powder, black pepper & white pepper.

In a separate bowl whisk water and cornstarch and add to pan and stir. continue cooking until soup starts to thicken (about 2 minutes).

Serving Size: Recipe yields approximately six, 1 cup servings

    What a great way to use up some extra broccoli. I didn't have any Velveeta, so I used sharp cheddar instead. Next time I'll get the Velveeta because the cheddar didn't melt and meld completely. Regardless, this is a delicious way to enjoy the world's most hated veggie. - 4/7/21

    This is delicious! My one big concern is the amount of sodium in this recipe. I’m not sure how to reduce that without taking away from the yummy flavor. Next time, I think I’m going to make it with unsalted bone broth. That will reduce the sodium and add to the protein. - 10/1/19
