Lentil Cabbage Soup - NMM

Ingredients
1 c. dry lentils2 c. water1 large can crush tomatoes with juice1 green pepper, chopped2 T. Herbes de Provance1 T. capers
Directions
Cook at a simmer about 4 hours, stirring occasionally, until lentils are soft. Add water as lentils absorb the juice. Add salt only after cooking or lentils will become tough. Add salt to taste.
