Ingredients
4 cups Jicama, coarsely shredded or chopped1/4 cup lime juice1 tbsp olive oil1 tbsp chili powder1/2 tsp ground mexican oregano
Directions
In large bowl, combine lime juice, chili powder and oregano. Whisk in olive oil. Add jicama and toss well. For best flavor, refrigerate 24 hours before serving.

Serving size: 1 cup

Ingredient notes:

* If you can't get fresh lime juice, I like Nellie & Joe's Key Lime Juice. Don't use RealLime. Eww.

* Mexican oregano is available at ethnic food stores or from Penzeys. It's more pungent than regular oregano.

Tangy. Adding a bit of feta or goat cheese makes a nice accent to the salad. - 8/9/09

Quick, simple, fresh and tasty. I agree about the lime juice; I've been a big fan of Key Lime for years. It also makes an awesome cheesecake. - 12/6/09
