Wilted Cucumber Salad

Ingredients
2 medium cucumbers1/4 cup red or white onion1 Tsp Canola Oil3 Tsp VinegarSalt and Pepper to TastePinch sugar (optional)
Directions
Peel and very thinly slice cucumber. Put in bowl and cover with cold water and 1/4 cup salt. Refridgerate overnight. Rinse cucumbers and drain well. Add onions, oil, vinegar, salt and pepper, mix well. Add pinch of sugar if vinegar seems too tart.

Makes 4 half cup servings. Great over tomato slices or alone.
