Veggie curry

Ingredients
Coconut oil Coconut milk cannedchicken or vegg brothsweet potatoscarrotsonionsbroccoli ... etc- whatever veggies you likecurry powder or paste
Directions
Chop up all the veggies- can add diced onions, broccoli, cauliflower, various colored bell peppers- whatever you like. Heat coconut oil in large pot. Add all the veggies to pot. Add desired amount of curry powder or paste. Stir frequently. When aromatic and veggies begin to color, add coconut milk and chicken broth. Reduce heat to just simmer. Cover with lid. Stir occassionally for about an hour.
