1 teaspoon margarine2 tablespoons thinly sliced scallion3 tablespoons fat-free half-and-half2 tablespoons sour cream6 ounces cooked, diced potatoes1/2 teaspoon salt1/8 teaspoon pepper
In 9-inch nonstick skillet melt margarine; add scallion and saute over medium heat until softened, about 1 minute. Add half-and-half and cook, stirring occasionally, until mixture begins to come to a boil, about 1 minute; stir in sour cream. Reduce heat to low; add potatoes, salt, and pepper and stir to combine. Cook, stirring frequently, until potatoes are heated through and mixture thickens, 1 to 2 minutes.
