Arabic Cheese Filled Pastries

Ingredients
1/2 c. unsalted butter1/2 c. olive oil1/2 c warm water1 tsp. salt2 c. all-purpose flour2 c. whole wheat flourFilling:1 lb. feta cheese, crumbled or mashed2 eggs1/4 c. chopped fresh mint, or 2 tbs. dried mintfreshly ground white pepper to taste1 egg, lightly beaten6 tbs sesame seeds
Directions
Melt butter but do not let it bubble. Remove from heat and add oil, water and salt. Transfer to a large bowl and gradually add flour. May need a little more water because of the wheat flour. The dough will be very soft and should not stick to the bowl. On a lightly floured surface divide the dough into 3 pieces, divide each piece into 12 pieces. Roll out each piece into a 3-inch round.

To make filling, combine all the ingredients. Stir to blend. Place 2 teaspoons filling on each round and fold in half to make a semicircle. Seal the edges with a fork.

To bake: Preheat oven to 400 degrees F. Place the pastries on an ungreased baking sheet, brush with beaten egg, sprinkle with sesame seeds, bake until golden, about 20 minutes. Serve warm.

I bake half and freeze half for later.
