Mexican Pork Chops

Ingredients
1 Cup Water16oz Pork Loin Chops10oz Can Diced tomatoes& green chilies1 Medium/large green pepper sliced1 Cup Mexican Shredded Cheese1/4 Tsp Pepper1/4 Tsp Salt2Tbsp Oil2/3 Cup Brown rice
Directions
~In large skillet heat oil and place pork in pan. Season chops with half of the salt and pepper. Cook about 3-4 minutes. Flip and season with remaining salt and pepper. Cook another 3-4 minutes or until cooked through.
~Mix tomatoes,water and rice together and place in a greased casserole dish.
~Place pork over rice and green peppers over pork.
~Cover tightly with foil and cook at 350 for 50 minutes.
~Uncover and sprinkle cheese over top. Bake another 5 minutes or until cheese is melted.
Enjoy with a side of veggies and or salad!

    I really liked this dish eventhough I made it without the cheese on top. Tasty and easy to do. I had to cook it quite a bit longer, though because the rice wasn't done in 50 minutes. But very yummy. Thanks. - 8/3/09

    We had this tonight and it was absolutely lovely. My husband gave it 9 out of 10 not bad hey. Will make it definately again Have made this again on Hubby s request and enjoyed again. Have added it to my tracker as a regular - 7/17/08
