Herbed Brown Rice with Mushrooms

2 cups prepared brown rice1 teaspoon canola or olive oil 1 small onion, chopped2 cups sliced mushrooms1 teaspoon fresh thyme salt and pepper to taste 1 can (14.5 ounces) white beans, drained and rinsed
Reheat the brown rice.
Meanwhile, heat a medium skillet over medium-high heat, add the oil, then the onions. Cook for three minutes, then add the mushrooms, thyme and black pepper. Cook for five minutes, until the onions are starting to turn brown and the mushrooms have darkened in color.
Stir in the beans and rice, and cook another two minutes.
Remove from heat and serve immediately.

In the past couple of weeks there have been more "recipes" featuring packaged products full of chemicals and preservatives than there have been actual recipes--so why doesn't Spark People call them something else like Ad Sponsored Dishes--kinda sad--glad I have all the old recipes. - 2/20/13
