Herbed Brown Rice with Mushrooms

Ingredients
2 cups prepared brown rice1 teaspoon canola or olive oil 1 small onion, chopped2 cups sliced mushrooms1 teaspoon fresh thyme salt and pepper to taste 1 can (14.5 ounces) white beans, drained and rinsed
Directions
Reheat the brown rice.
Meanwhile, heat a medium skillet over medium-high heat, add the oil, then the onions. Cook for three minutes, then add the mushrooms, thyme and black pepper. Cook for five minutes, until the onions are starting to turn brown and the mushrooms have darkened in color.
Stir in the beans and rice, and cook another two minutes.
Remove from heat and serve immediately.

    I am making this right now, didn't have the white beans though; nor, fresh thyme, but ground Thyme .. my sister thought I should use only half the amount called for since it was ground, do you agree? So, far the mushrooms are pretty tasty!!! - 2/13/13
