Red Pearl Onion Pie w/"Easy" Crust

Ingredients
Nabisco Ritz Crackers -25 Crackers1 Bag Red Pearl Onions (about 25 pieces) Cut each in 1/2...really small ones can stay whole.1 large Yellow onion choppedScallions, raw, .25 cup, choppedSour Cream, 1.5 cupsMilk, 2%, .5 cup Egg, fresh, 2 large All-Purpose White Flour 1 TbspNutritional Yeast, Vegetarian 2 TbspCountry Crock Plus Calcium 2 TbspSalt and Pepper if desired.
Directions
For the Crust:

Line glass pie dish with crackers bottom and on sides. That's it--wanted to keep it easy.

For the filling:

Saute onions in Country Crock about 10-15 minutes. Add Salt and Pepper if desired.
Put in pie dish.
Mix together the remaining ingredients and pour over onions.
Top with scallions.

Bake 350 for approx. 30 minutes.

    I made this for Thanksgiving dinner. Everyone loved it and it was sooo...easy!!! Thanks! It is a keeper. Plus I made it with Light Sour Cream, Low Fat Ritz crackers and skim milk.
