Joanie's leftover chicken salad

Ingredients
7 ounces chicken breast 1 granny smith apple, small dice2 ribs celery, small dice6 scallions, sliced small1/4 cup mayonnaise1/4 cup 0% fage greek yogurtsalt and pepper to taste
Directions
Chop everything into a bowl and fold in the mayo, yogurt and salt and pepper. It's best, in my opinion, if the veggies are chopped quite small. Also better the next day!

This makes enough for three generously filled sandwiches. You could even add more veggies if you want; I've even added broccoli -- quite delish, but again must be cut small.
