Sweet Potato Chili (for crockpot/ slow cooker)

Ingredients
3 Cups White beans1 Can Tomatoes - diced - with juice725 gr Sweet potato (1 large) - diced250 gr Pumpkin. - diced1 Onion - diced1 tbspn Chili powder1 tbspn Cocoa powder1 tspn Cumin1 tspn Garam Masala1 tspn Rosemary1 Cup Water1 Cup Instant Minute Rice (added last)
Directions
Spay crockpot. Cut sweet potato, pumpkin and onion. Add to crockpot and mix with white beans.
In a separate bowl, mix spices with tomatoes. Add to veggies. Add water. Cook at low for 6 - 8 hours.

Collect one cup of chili juice and mix with 1 cup Instant Minute Rice. Cook in the microwave for 4 1/2 min. Add rice (cooked) to chili, mix well and serve...

    This is a really good dish and great on a cool autumn night! I skipped the pumpkin, simply because I didn't have one. The spices don't overwhelm the dish; some diners may wish to add a bit, or add some salt or pepper. I'll make it again! - 11/30/16
