Creamy Mashed Potato Casserole

Ingredients
6 large Russet potatoes, peeled and quartered (about 3 lbs)4 oz light cream cheese, softenend, cubed3/4 cup hot low fat milk1/2 cup light cheddar cheese1/4 cup dry bread crumbs1/2 tsp paprikafreshly grated nutmeg
Directions
Cook peeled and cut up potatoes in boiling water about 20 or until fork tender. Drain, and return to pot on low heat for 1 to 2 minutes to dry potatoes.

Mash or rice potatoes very smooth and mix with milk and cream cheese. Season with Nutmeg to taste. Spray 8 cup casserole dish with food spray and spread potato mixture into dish.

Combine cheddar cheese, bread crumbs, and paprika and sprinkle over potatoes.

Bake uncovered for 40 to 50 minutes until top is golden.
