cactus salad Michoacan Style

Ingredients
*cactus, 2 cup choppedOnions, raw, 1 cup, chopped Red Ripe Tomatoes, 5 Italian tomato dicedCilantro, raw, 10 tbsp choppedJalapeno Peppers, .33 cup, dicedSalt, 1.5 tbspSalt for water water for boiling
Directions
bring a small pot of water to a boil and add salt. Add the cactus and let cook for about 10 minutes until they go from bright green to more of a army green. Strain in a colander and let cool. In the mean time chop the veggies, add the cactus to a bowl and mix in all the veggies and cilantro. Season with the tablespoon and a half sa;t untill it is to your liking.

Serving Size: Maked 6 side dhis servings or 3-4 for a vegetarian taco option
