1 cup uncooked Long Grain Rice1 tsp Olive Oil1 cup Chopped Onion1 7 oz can Chopped Green Chiles (drained)1 cup water1 cup 99% Fat Free Chicken Broth1 can Rotel Diced Tomatoes & Green Chiles1 chopped Chipotle Pepper in Adobo Sauce1/2 cup chopped red bell pepper1/2 teaspoon Chili Pepper1/2 teaspoon Cumin Powder1/2 teaspoon Black Pepper2 cloves chopped garlic
Cook 1 cup rice in 1 cup broth and 1 cup water. While rice is cooking, heat 1 tsp olive in skillet. Cook onions, garlic and red bell pepper until onions begin to brown slightly. Add the rest of the ingredients and simmer until rice is ready. Mix rice into skillet mixture. Pour into 8x8 pan. Cook for 30 minutes at 375. Do not cook if you want a wetter rice. You can adjust seasonings to taste. I like it spicy. Makes 8 1/2 cup servings
