Pumpkin Pancakes

Ingredients
1 1/2 c. 1 % Milk1 c. pumpkin puree (canned)1 egg2 tbsp vegetable oil2 tbsp vinegar2 c. all purpose flour3 tbsp brown sugar2 tsp baking powder1 tsp baking soda1 tsp ground allspice1 tsp ground cinnamon1/2 tsp ground ginger1/2 tsp salt
Directions
In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle (I used a 1/2 c. full to make 11 pancakes with this recipe). Brown on both sides and serve hot.

Serving Size: Makes 11 pancakes using 1/2 c. to pour
