Bratwurst w/ Red Beans & Rice

2 Tbsp oil1 large onion1 yellow or red pepper, diced2 cloves of garlic, minced1 lb. bratwursts (can substitute turkey smoked sausage, or vegetarian smoked sausage)1 can kidney beans (15 oz) - (I strain+ use low salt.)1 can diced tomatoes w/ basil & garlic (14.5 oz)1/2 tsp red pepper flakes (or cayenne pepper)2 tsp oregano, dried flakes1tsp thyme, fresh or pinch dried1 pinch salt1/2 tsp black pepper2 cups cooked brown rice1/3 - 1/2 cup water
Heat oil in large heavy skillet. Add bratwursts, onion, diced peppers, and garlic. While cooking, slice up bratwursts into smaller pieces. Cook just until browned.
Add spices, beans, and tomatoes. Stir to combine.
Add rice, stir to combine again.
Heat all together for about 15-20 min at medium to low heat. This gives ingredients time to blend.
Serving Size: Makes 8-10 hearty one-cup servings.
