Ingredients
1 16 oz can enchilada sauce1 pound lean ground beef1 15 ounce refried beans (fat free)1 12 oz package corn tortillas1 cup shredded cheddar cheese1 cup shredded monterey jack cheese
Directions
Brown ground beef with garlic salt and onion powder. Drain fat. (I usually just boil the meat in water with spices, then drain - makes it leaner!). Mix the beans and 1/2 cup enchilada sauce. Dip tortillas into sauce, use them to cover the bottom of a 3 quart casserole. Spoon in 1/2 the meat mixture, Spread half the cheeses over the meet, cover with tortillas dipped in enchilada sauce. Spoon in remaining meat mixture, top with final layer of tortillas dipped in enchilada sauce. Pour remaining sauce on top, then cover with rest of the cheese.
