Roasted Carrots & Potatoes

Ingredients
4 potatoes1 pound of carrots2 tbs olive oil1 onionherbs and spices to taste
Directions
Cut the veggies into 1" cubes and toss with olive oil and the spices and herbs of choice. Cook in a covered 9X13 pan for 45 minutes at 325. Uncover and toss. Cook for an additional 20 minutes at 450.
