4 4-oz Salmon filetsDijon Mustard, 2 tsp per filetSalt & pepper to tastePanko breadcrumbsButter, unsaltedDill weed
Place filets in foil-lined baking dish. Spread a thin layer of dijon mustard on each filet. Salt & pepper to taste. Add dill weed, if desired. Top each filet with breadcrumbs. Drizzle melted butter (can substitute olive oil) on top. Bake at 400 degrees for 15 minutes, then place under broiler for about 1 minute.
