Ground Beef Spinach and Cilantro Quinoa

1 lb grass-fed organic beef1 8 oz package baby bella mushrooms, chopped1/2 cup chopped onions1 14.5 can no salt added diced tomatoes2 cups chopped fresh spinach2 cups cooked quinoa2 t sea salt1 t garlic pepper1/2 cup chopped fresh cilantro
In large, nonstick skillet, brown the ground beef over medium high heat. Reduce heat to medium and add mushrooms and onions. Cook and stir until mushrooms and onions soften. Add tomatoes, spinach, quinoa, salt, and pepper. Stir to combine well. Reduce heat to medium low and simmer, stirring occasionally, for 15 minutes. Stir in cilantro, simmer for 5 more minutes and serve.
